Bitkisel atıklardan sağlık üzerine faydalı etkiye sahip olan biyoaktif bileşiklerin elde edilmesi,
bu atıkların bertarafına alternatif olarak faydalı ve değerli bir yaklaşımdır. Mısır bitkisinin
karotenoidler, flavonoidler, fenolik bileşikler gibi antioksidan bileşikler açısından zengin
olduğu ve kabuk kısmının bitkisel atıklara dahil olduğu bilinmektedir. Bu çalışmada, farklı
kurutma yöntemlerinin atık mısır kabuğu tozlarının renk ve fizikokimyasal özellikleri ile
toplam fenolik içerik ve antioksidan kapasite düzeyleri üzerine etkisi araştırılmıştır. Taze ve
kurutulmuş toz atık mısır kabuklarında toplam nem içeriği, toplam kül içeriği, toplam asitlik,
çözünür kuru madde miktarı, pH, su aktivitesi ve renk değerleri belirlenmiştir. Kurutma işlemi
sonucu taze mısır kabuğu tozuna kıyasla toplam renk farkının (ΔE) bütün kurutulmuş örnekler
için gözle görünür şekilde değiştiği belirlenmiştir. En yüksek ΔE değerinin (24.42 ± 1.48)
mikrodalgada kurutulmuş mısır kabuğu tozunda (MMK) olduğu saptanmıştır. Örneklerden
fenolik bileşiklerin ekstraksiyonunda iki farklı solvent kullanılmış ve % 1 HCl ile
asitlendirilmiş olan solventin (80MH) toplam fenolik içerik verimini artırdığı tespit edilmiştir.
Kurutulmuş mısır kabuğu tozlarında en yüksek (323.25 ± 3.56 gallik asit eşdeğeri (GAE)/100
g kuru madde (KM)) toplam fenolik içerik, 80MH solventi ile ekstrakte edilen konveksiyonel
fırında kurutulmuş mısır kabuğu tozunda (KMK) belirlenmiştir. Bir diğer öne çıkan sonuç ise
ABTS yöntemiyle belirlenen antioksidan kapasite düzeyinin tüm örneklerde DPPH yöntemine
göre daha yüksek olmasıdır.
Obtaining bioactive compounds that have beneficial effects on health from plant wastes is a
useful and valuable approach as an alternative to the disposal of these wastes. It is known that
the corn plant is rich in antioxidant compounds such as carotenoids, flavonoids, and phenolic
compounds, and the husk part is included in the plant wastes. In this study, the effects of
different drying methods on the color, physicochemical properties, total phenolic content and
antioxidant capacity levels of powdered waste corn husks were investigated. Total moisture
content, total ash content, total acidity, soluble solids amount, pH, water activity and color
values were determined in fresh and dried powdered waste corn husks. As a result of the drying
process, it was determined that the total color difference (ΔE) compared to fresh corn husk
powder changed visibly for all dried samples. It was detected that the highest ΔE value (24.42
± 1.48) was in microwave-dried corn husk powder. Two different solvents were used in the
extraction of phenolic compounds from the samples and it was determined that the solvent
acidified with 1% HCl (80MH) increased the total phenolic content yield. In dried corn husk
powders, the highest (323.25 ± 3.56 gallic acid equivalent (GAE)/100 g dry matter (DM)) total
phenolic content was detected in convection oven-dried corn husk powder (DMK) extracted
with 80MH solvent. Another prominent result is that the antioxidant capacity level determined
by the ABTS method in all samples is higher than the DPPH method.
