In this study, apricot kernel oil was extracted from the kernel of apricot fruits and its physico chemical properties were studied. In addition apricot kernel oil was reacted with stearic and palmitic acid in hexane in the presence immobilized porcine pancreatic lipase to give products enriched with these fatty acids.
