Abstract:Fats constitute one of three major classes of food product and an important part of human food. Edible vegetable oil consists of 71% of our oil needs. Because of the increasing need for raw materials, studies on alternative source of oil have gained great importance. Therefore, this study is intended to do the chemical content characterization analysis of the products such as plum, white mulberry, cherry, sweet cherry, melon, stinging nettle, radish, laurel, terebinth and hemp oilseeds which are not consumed traditionally. For this purpose, ABTS and DPPH analysis has been done to determine antioxidant activity of seeds and kernel oils obtained by cold-pressing method, percentage of oil, fatty acids, tocopherol isomers, iodine value. Oxidative stability was determined by applying peroxide value, conjuge dien value, 2-thiobarbituric acid (TBA) test, and Rancimat and FT-IR methods were also used. Cu, Fe, Ca, Mg mineral contents of oils were determined by using ICP-OES technique.Percentage of oil was determined between 30,31±0,27 with 43,1±0,34 It has been seen that these oils were rich in oleic and linoleic acids. It has been determined that plum seed oil has the maximum rate of oleic acid ( 67%) and white mulberry oil has a maximum rate of linoleic acid (77%). It has also been determined that hemp oilseed has the content of linoleic acid with a rate of 22 %. Laurel and terebinth oils were found to be richer in saturated fatty acid content than the other oils. Radish oilseed was determined to be oil- rich in erusic acid which couldn?t be identified in other oils. In terms of Oil tocopherol isomers; it was found that sweet cherry oilseed was richer in ?- tocopherol isomer, laurel oilseed was richer in ß- tocopherol isomers, plum oilseed was richer in ?-tocopherol isomer than other oils. Especially white mulberry oilseed with 1354,25±17,91 mg/kg oil ?-tocopherol content, was determined to have the most ?-tocopherol that has ever been identified in the literature. The highest activity was seen in white mulberry oilseed, in terms of DPPH radical scavenging capacity and the highest ABTS radical scavenging capacity was seen in laurel oilseed. Peroxide value of non-oxidize oils ranged between 0,21and 7 meq/kg oil. Peroxide value of cherry kernel oil reached 67 on the 6th day and peroxide value of laurel oilseed reached to 40 meq/kg oil on the 24th day. TBA value changed from 0,44 to 415 µmol/g oil and rate of conjuge dien changed from % 0,044±0,01 to 2,153±0,02. İodine value changed from 94 to 132 g iodine/100g. It has also been seen that oils that have been analyzed were rich in terms of mineral content. As a result of this research, oils which were analysed can be evaluated as an alternative to traditionally consumed vegetable oils or as additives to them.
