Alıç (Crataegus spp.) zengin besinsel içeriğe ve antioksidan bileşiklere sahip bir meyvedir. Alıcın
muhafazasında tercih edilen yöntemlerin en başında kurutma işlemi gelmektedir. Bu çalışmada güneşte kurutma
yönteminin meyvenin fizikokimyasal özellikleri, fenolik profili ve antioksidan aktivitesi üzerine etkisi
incelenmiştir. Kurutulmuş meyvenin suda çözünen kuru madde miktarı, su aktivitesi, toplam asitliği ve toplam
kuru madde içeriği sırasıyla 19.98 ± 0.99 °Briks (°Bx), 0.943 ± 0.001, % 1.26 ± 0.01 ve % 46.89 ± 0.80 olarak
belirlenmiştir. L

* değerleri ise sırasıyla 37.86 ± 0.36, 17.49 ± 0.19 ve 29.19 ± 0.22 olarak saptanmıştır.
Yüksek basınçlı sıvı kromatografisi (HPLC) ile fenolik profili incelenmiştir. HPLC ile belirlenen fenolik
bileşikler fenolik asitlerden (yani gallik, klorojenik, kafeik, şirincik ve p-kumarik asitler) ve flavonoidlerden
(yani kateşin, epikateşin, rutin ve prosiyanidin-B2) oluşmuştur. Kurutulmuş alıçta en fazla bulunan fenolik
bileşiğin rutin (65.57 ± 0.27 mg/kg kuru madde (KM)), en az bulunan fenolik bileşiğin ise kafeik asit (0.34 ±
0.03 mg/kg KM) olduğu tespit edilmiştir. Rutini sırasıyla prosiyanidin B2 ve şirincik asit takip etmiştir. Toplam
fenolik içerik 4.34 ± 0.23 mg gallik asit eşdeğeri (GAE)/g KM olarak belirlenmiştir. Bir diğer öne çıkan sonuç
ise DPPH yöntemi ile belirlenen antioksidan aktivite düzeyinin ABTS yöntemine göre daha yüksek olmasıdır.
Hawthorn (Crataegus spp.) is a fruit with rich nutritional content and antioxidant compounds. Drying is one of
the most preferred methods for the preservation of hawthorn. In this study, the effect of sun drying method on
the physicochemical properties, phenolic profile and antioxidant activity of the fruit was investigated. The
amount of water-soluble solids, water activity, total acidity and total dry matter content of the dried fruit were
determined as 19.98 ± 0.99 °Brix (Bx), 0.943 ± 0.001, 1.26 ± 0.01% and 46.89 ± 0.80%, respectively. L

* values were found to be 37.86 ± 0.36, 17.49 ± 0.19 and 29.19 ± 0.22, respectively. The phenolic profile
was examined by high pressure liquid chromatography (HPLC). Phenolic compounds identified by HPLC were
composed of phenolic acids (ie gallic, chlorogenic, caffeic, syringic and p-coumaric acids) and flavonoids (ie
catechin, epicatechin, rutin, and procyanidin-B2). It was detected that the most abundant phenolic compound in dried hawthorn was rutin (65.57 ± 0.27 mg/kg dry matter (DM)), and the least abundant phenolic compound
was caffeic acid (0.34 ± 0.03 mg/kg DM). The rutin was followed by procyanidin B2 and syringic acid,
respectively. The total phenolic content was determined as 4.34 ± 0.23 mg gallic acid equivalent (GAE)/g DM.
Another prominent result is that the antioxidant activity level determined by the DPPH method is higher than
that of the ABTS method.
